Delicious and low-carb Quiche Lorraine with the crust, that EVERYBODY will enjoy even if they aren't following a diet. Eat for breakfast, lunch; this quiche goes good at anytime.

- 2 cups Almond Flour
- 2 tbsp Butter (soft)
- 1 Egg
- 1/4 cup Shredded parmesan cheese
Filling
- 6 Eggs
- 8 oz Gruyère cheese
- 1 cup Heavy cream
- 8 slices Bacon (cooked and chopped)
- 1/2 Yellow onion (caramelized)
- 2 tbsp Yellow mustard
- 1/4 tsp Salt
- 1/4 tsp Black pepper (ground)
- 1 pinch Nutmeg (ground)
Crust
Preheat your oven to 400ºF with your rack in the middle position. Combine all the crust ingredients in a food processor (you can use a spoon or your hands) and pulse until it starts to crumble.
Place the dough in a 9in baking dish and spread until the dough is uniform on the bottom of the dish.
Bake it for 15 to 20 minutes, or until the crust starts to brown. Reduce the oven temperature to 350ºF.
Filling
With the help of a pastry brush, spread the mustard on the crust.
Place the onions uniformly on the crust.
Put the bacon on top of the onions. Try to make an even layer.
Whisk together the eggs, heavy cream, cheese, salt, pepper and nutmeg. Carefully pour the egg mixture over the top.
Bake for 30/35 at 350ºF minutes or until the custard is set and golden. Serve it warm!
