Delicious and low-carb Quiche Lorraine with the crust, that EVERYBODY will enjoy even if they aren't following a diet. Eat for breakfast, lunch; this quiche goes good at anytime.

Ingredients
  

  • 2 cups Almond Flour
  • 2 tbsp Butter (soft)
  • 1 Egg
  • 1/4 cup Shredded parmesan cheese

Filling

  • 6 Eggs
  • 8 oz Gruyère cheese
  • 1 cup Heavy cream
  • 8 slices Bacon (cooked and chopped)
  • 1/2 Yellow onion (caramelized)
  • 2 tbsp Yellow mustard
  • 1/4 tsp Salt
  • 1/4 tsp Black pepper (ground)
  • 1 pinch Nutmeg (ground)

Instructions
 

Crust

  • Preheat your oven to 400ºF with your rack in the middle position. Combine all the crust ingredients in a food processor (you can use a spoon or your hands) and pulse until it starts to crumble.
  • Place the dough in a 9in baking dish and spread until the dough is uniform on the bottom of the dish.
  • Bake it for 15 to 20 minutes, or until the crust starts to brown. Reduce the oven temperature to 350ºF.

Filling

  • With the help of a pastry brush, spread the mustard on the crust.
  • Place the onions uniformly on the crust.
  • Put the bacon on top of the onions. Try to make an even layer.
  • Whisk together the eggs, heavy cream, cheese, salt, pepper and nutmeg. Carefully pour the egg mixture over the top.
  • Bake for 30/35 at 350ºF minutes or until the custard is set and golden. Serve it warm!
